Day 1 down
Monday, January 9, 2012 at 2:45PM So....how do you feel?? Not too bad right? Remember how good you feel today to help you get through some tough days to come. I need a couple things from all of you...

- measurements & weigh ins completed by Wed. (please contact me if I don't catch you during class)
- MONEY - how we going to use our money 'BUY IN' as motivation if we don't know the total...Remember the price changed to $30/team so $15/person.
Keep up the good work! We are already seeing progress with several of you RXing todays WOD & Yvonne RXing her FIRST workout!! Love it....Keep it up.

Questions about diet Mindy- when we did zone it was easy to get your carbs in with fruit because you didn't have to eat as much as compared to veggies- anyone else struggling with the quantity of veggies to make up a snack or meal. Good lord. 1 cup tomatos is A LOT. Or 2 cups broccoli- one point? I ended up eating 3 pickles for breakfast this morning just to not have to eat so much in quantity. Anyone else struggling with that a bit? For example- 1 entire cucumber is 1 point. I was aiming to do a 2 point snack (and 2 point meals)- because I get really hungry in the afternoon. But 2 points of veggies in the afternoon seams like a lot- yet I want 2 points of protein then. (My schedule of meals was 2 point bfast, 2 point lunch, 2 point snack, 2 point dinner, 1 point snack- if I can force myself to eat that last snack. Ack.). Input welcome.

Sarah - I definitely am too. I'm trying to have one fruit at breakfast and save one for snack, but it's still alot of veggies besides that. Like right now, I am not wanting the evening snack at all - but will try to get one down, with my carb/veggies being pickles too :)
brilliant idea for nightime snack. I don't want anything at all. Blah..... who wants a cucumber at 8:00 o'clock at night? What are other people eating?
I just discovered another way to eat the carb points without feeling like a stuck pig- canned artichoke hearts (1 point each). And I have eaten more salt today than ever. It's a salty diet this paleo thing.
IDEAS:
For carbs try Yam. Our favorite "Viking Hash"
4 yams
1 yellow onion
1 bacon nitritate free bacon.
Chop bacon into 1" squares. Add diced onions after bacon begins to brown.
Cook Yams 400 degrees for 30 min or until soft.
Placed shredded yams in with bacon and fry.
Great for breakfast, even better for recovery meal.

For you coffee spikers, try cinnamon. Simple, paleo friendly and great for your heart.
Made your sweet potato hash this a.m. along side a spinach quiche. Good stuff. I made mine with turkey bacon.
Sarah we had your chicken tortilla soup (w/o tortillas) over baked winter squash last night, it was really good and filling. I love that hash with cubed sweet potatos or squash. Another idea is to add fresh spinich till cooked then a splash of balsamic vinegar at the end (www.everydaypaleo.com) Good stuff! Keep those ideas coming everyone! See even those of us not "officially" signed up for the challenge are right there with ya!
Jicama is my solution for the carbs. Skin and then chop into sticks or cubes. Good drizzled with a little balsamic or other vingar. I put cinnamon on it and heated up. Quite good. Will be experimenting.
